This coffee comes from different farmers from the Popayan reserve in the Cauca region. It goes through a unique decaffeination process which uses water and sugar cane, which slowly increases the sweetness level of the coffee beans while altogether reducing its caffeine content by 99,5%.
How does the sugar cane process work?
This unique decaffeination method is nature-inspired and designed to preserve the integrity of the coffee bean. Using ethyl acetate (EA) extracted from sugarcane molasses, this process gently and selectively removes caffeine without compromising the coffee’s sensory qualities.
The process begins with a steam treatment that opens the bean’s structure, allowing the natural solvent to penetrate. The EA is then applied in successive stages, selectively binding to the caffeine, which is subsequently removed along with the solvent. After a meticulous cycle of rinsing and drying under controlled conditions, the coffee is ready to be packed. The result? A decaf that remains true to its origin—deep, vibrant, and full of character.
